As Dr. B suggested, take your bird to an Avian Vet to be checked for infection or other physical problems. Eating poop that has been in cage for more than 24 hours can and does result in bacterial infections which have to be diagnosed and treated by an Avian Vet. She could already be sick, and eating poop is just one of the symptoms or she is lacking in correct nutrition. Feeding all seed diets is a very slow starvation for birds, and they try to remedy this by eating all manner of strange things. The Harrison's pellets are the best, and I've used them with my Amazons for many years with great results. Here is a link on how to change over from seed to pellets as it takes time:

Make NO changes in diet until bird has been checked out by an Avian Vet as sick birds do not need the stress of facing a new kind of diet or any other changes.

It could mean she is sick, or has nutritional deficiencies. Or it could mean that she is just cleaning house. Bird will crumble dried poop to make it ?go away? as part of cleaning their environment. Make sure you are feeding 80% pellets ( Harrison's is the best). Clean the cage and take your bird to see an avian veterinarian. Birds should be seen annually for check ups and vaccines.
